  • 6 oz (170g) thick-cut bacon, cut into ½-inch pieces
  • 3 tablespoons (60ml) pure maple syrup
  • 2 tablespoons (30ml) olive oil
  • Salt and black pepper to taste
  • ½ teaspoon red pepper flakes (optional)
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Cut bacon crosswise into ½-inch pieces. Spread in a single layer on the prepared baking sheet and par-cook for 8-10 minutes until it starts to brown but is still soft. Transfer bacon to a paper towel-lined plate, leaving rendered fat on the sheet.
  3. While bacon cooks, rinse Brussels sprouts and pat dry. Trim the tough stem ends, remove any yellow leaves, and halve lengthwise (quarter if very large).
  4. In a large bowl, toss halved Brussels sprouts with olive oil, maple syrup, salt, and pepper until evenly coated.
  5. Arrange seasoned sprouts cut-side down on the same baking sheet with the bacon fat, spreading in a single layer without overcrowding.
  6. Roast for 15 minutes without disturbing.
  7. Remove from oven, flip each sprout with tongs, and sprinkle par-cooked bacon pieces evenly over the sprouts.
  8. Return to oven and roast for another 10-15 minutes until deeply caramelized and crispy.
