Best Loaded Buffalo Chicken Stuffed Sweet Potatoes (Easy)

Roasted sweet potatoes loaded with spicy buffalo chicken, melted cheddar, and cool ranch dressing. An easy, healthy, and incredibly delicious weeknight dinner that tastes like comfort food.

  • 2 large sweet potatoes (orange-fleshed, like garnet or jewel yams)
  • 2 cups cooked chicken, shredded (rotisserie chicken recommended)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/4 cup blue cheese crumbles (optional)
  • Ranch or blue cheese dressing (for drizzling)
  • 2 green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub sweet potatoes, pat dry. Pierce each potato 6-8 times with a fork. Place on a lined baking sheet.
  2. Roast sweet potatoes for 40-50 minutes, until tender and easily pierced with a fork. Start checking at 35 minutes for smaller potatoes.
  3. While potatoes roast, combine shredded chicken, buffalo wing sauce, and melted butter in a medium bowl. Stir until chicken is evenly coated. Set aside to let flavors meld.
  4. Remove sweet potatoes from oven and let cool for 5 minutes. Cut a slit lengthwise down the center of each, being careful not to cut all the way through. Gently push ends toward center to open. Fluff the inside with a fork.
  5. Divide buffalo chicken mixture evenly between the two sweet potatoes, piling it high. Sprinkle shredded cheddar cheese over the top.
  6. Optional: Return assembled potatoes to oven for 3-5 minutes to melt cheese, or broil for 1-2 minutes, watching closely.
  7. Remove from oven. Sprinkle with blue cheese crumbles and sliced green onions. Drizzle generously with ranch or blue cheese dressing. Serve immediately.

Notes

Don’t under-roast the sweet potatoes; they should be very soft and creamy. Use room temperature chicken to avoid cooling the dish. Double the buffalo sauce mixture for extra to drizzle on top. For crispy skin, after initial roast, cut potatoes open and broil cut-side up for 2-3 minutes before adding chicken. Always pierce sweet potatoes before roasting to prevent exploding.
