  • ¼ cup heavy cream
  • ¼ cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

  • ⅓ cup all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg, freshly grated if possible

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Scrub the sweet potatoes clean, pierce each a few times with a fork, and place on the baking sheet. Roast for 45-60 minutes until tender all the way through. Let cool for about 10 minutes.
  3. Peel the skins off the sweet potatoes and transfer the flesh to a large mixing bowl. Mash with a hand mixer or potato masher until smooth (about 4 cups).
  4. To the mashed sweet potatoes, add 4 tablespoons melted butter, ¼ cup maple syrup, 3 tablespoons bourbon, ¼ cup heavy cream, ¼ cup packed brown sugar, 2 eggs, 1 teaspoon vanilla, and ½ teaspoon salt. Mix on low speed until combined and smooth.
  5. In a small bowl, combine 1 cup chopped pecans, ⅓ cup all-purpose flour, ¼ cup packed brown sugar, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg. Cut in 2 tablespoons cold butter until the mixture resembles coarse crumbs.
  6. Pour the sweet potato mixture into a greased 9×13-inch baking dish and spread evenly. Sprinkle the pecan streusel over the top without pressing it in.
  7. Reduce oven temperature to 350°F (175°C). Bake for 25-30 minutes until the edges are bubbly and the topping is golden brown. Let rest for 5-10 minutes before serving.

Roast sweet potatoes instead of boiling to concentrate natural sugars and prevent waterlogging. Use room temperature eggs to avoid lumps.
