  • 16 ounces sharp cheddar cheese, freshly shredded
  • 12 ounces beer (ale or stout)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh chives, chopped (for garnish)

Instructions

  1. Shred the sharp cheddar cheese using a box grater.
  2. Soften the cream cheese at room temperature for 15-20 minutes or microwave for 15 seconds.
  3. In a small bowl, whisk together cornstarch, garlic powder, onion powder, mustard powder, salt, and cayenne pepper.
  4. Add softened cream cheese to the slow cooker. Pour beer over it, then add Dijon mustard and Worcestershire sauce. Sprinkle the dry ingredient mixture evenly on top. Add shredded cheddar cheese last, spreading it out evenly.
  5. Gently fold everything together until mostly combined.
  6. Cook on low for 1.5 to 2 hours. After 1 hour, stir from the edges toward the center.
  7. Stir again at 1.5 hours. If separated, whisk vigorously for 30 seconds.
  8. Check consistency: dip should be thick enough to coat a spoon. If too thick, stir in a splash of warm beer or milk. If too thin, cook uncovered for another 20-30 minutes.
  9. Garnish with fresh chives and switch slow cooker to warm setting for serving.

Notes

Shred your own cheese for the smoothest texture. Avoid light beers as they can make the dip watery. If the dip separates, whisk vigorously to bring it back together. The dip can be refrigerated for up to 4 days and reheated gently.
