A quick and easy cranberry relish with fresh ginger and orange that is tart, sweet, and slightly spicy. Perfect for holiday meals or weeknight dinners.

  • 12 ounces fresh cranberries (about 3 cups)
  • 1 large navel orange (zest and juice)
  • 1 tablespoon fresh ginger, grated
  • ½ cup granulated sugar
  • ¼ cup water
  • Pinch of salt

Instructions

  1. Rinse cranberries and pick out any soft or bruised ones. Wash the orange, zest it, then squeeze the juice (about ¼ cup). Peel and grate the ginger.
  2. In a medium saucepan, combine orange juice, orange zest, grated ginger, sugar, water, and a pinch of salt. Stir until sugar starts to dissolve.
  3. Add the cranberries to the saucepan and stir to combine.
  4. Place over medium-high heat and bring to a gentle simmer. Reduce heat to medium-low.
  5. Cook for 8 to 10 minutes, stirring occasionally, until cranberries burst and relish thickens slightly.
  6. Check consistency: it should coat the back of a spoon. For a smoother relish, gently mash some cranberries with a spoon or potato masher.
  7. Taste and adjust sweetness or ginger as desired.
  8. Remove from heat and let cool completely in a glass bowl or jar.
  9. Cover and refrigerate for at least 2 hours or overnight before serving.

Notes

Do not overcook the cranberries; keep heat at a gentle simmer. Let the relish rest in the fridge for at least 2 hours to meld flavors. This recipe doubles easily.
