Instructions

  1. Brown the butter: Melt 1 cup (2 sticks) unsalted butter in a heavy-bottomed skillet over medium heat, stirring constantly until it foams and turns golden brown with nutty aroma (7-10 minutes). Remove from heat and transfer to a heatproof bowl to cool for 10 minutes.
  2. Mix wet ingredients: Whisk cooled brown butter with 3/4 cup granulated sugar and 1/2 cup brown sugar until combined. Add 1 large egg and 1 teaspoon vanilla extract; mix until smooth and glossy. Stir in 1/2 cup pumpkin puree until fully incorporated.
  3. Combine dry ingredients: In a separate bowl, sift together 2 1/4 cups flour, 1 teaspoon baking soda, 1 teaspoon cream of tartar, 1/2 teaspoon salt, and 2 teaspoons pumpkin pie spice.
  4. Mix dry into wet: Slowly add dry ingredients to wet mixture using a spatula or mixer on low speed until dough forms. If dough is too sticky, chill in refrigerator for 15 minutes.
