A comforting, easy-to-make apple crisp featuring tender spiced apples and a crunchy oat pecan streusel topping. This recipe uses browned butter for a nutty depth and is perfect for cozy nights or holiday gatherings.

Ingredients

Scale
  • 6 large firm apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup pecans, chopped
  • 1 cup unsalted butter (cold cubed or browned and cooled)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Peel, core, and slice apples into 1/4-inch wedges. Place in a large bowl and toss with lemon juice.
  3. Sprinkle granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and salt over the apples. Toss to coat evenly.
  4. If browning butter, melt butter in a saucepan over medium heat until golden and nutty, then cool slightly. Otherwise, keep butter cold and cubed.
  5. In a medium bowl, combine oats, flour, chopped pecans, granulated sugar, brown sugar, and salt.
  6. Add butter to the dry ingredients. Pulse in a food processor or cut in with a pastry cutter/fingers until the mixture resembles coarse crumbs with pea-sized clumps.
  7. Pour the apple mixture into the prepared baking dish and spread evenly. Sprinkle the streusel topping generously over the apples and press down lightly.
  8. Bake for 45-55 minutes, or until the topping is golden brown and the apple juices are bubbling thickly around the edges.
  9. Let the crisp cool for at least 15-20 minutes before serving to allow the filling to thicken. Serve warm with ice cream or whipped cream.

Notes

Use firm apples like Granny Smith or Honeycrisp to prevent mushiness. Do not skip the cornstarch as it thickens the juices. Toasting pecans before chopping enhances their flavor. If the topping browns too quickly, tent with foil for the last 15 minutes. Let the crisp cool completely before serving to ensure the filling sets.
