  • 1/3 cup all-purpose flour

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt (for topping)
  • 6 tablespoons unsalted butter, cold and cut into small chunks
  • 1/2 cup whole milk (or almond/oat milk for dairy-free)
  • 1 teaspoon vanilla extract (for topping)
  • Optional: 2 tablespoons turbinado sugar for sprinkling on top

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine the sliced peaches, brown sugar, granulated sugar, bourbon, lemon juice, vanilla extract, flour, cinnamon, and salt. Stir gently until the peaches are evenly coated.
  3. Transfer the peach mixture to the greased baking dish, spreading it out evenly. Drain excess liquid if peaches are very watery.
  4. In a separate bowl, whisk together the flour, sugar, baking powder, and salt for the topping. Add the cold butter chunks and cut them into the dry ingredients using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized butter pieces.
  5. Stir in the milk and vanilla extract just until combined, being careful not to overmix.
  6. Drop spoonfuls of the topping evenly over the peach filling, covering as much surface as possible. Sprinkle turbinado sugar on top if desired.
  7. Bake in the preheated oven for 40-45 minutes until the topping is golden brown and a toothpick inserted comes out clean. The peach filling should be bubbling around the edges.
  8. Remove from oven and let cool on a rack for at least 15 minutes before serving.

Notes

Use cold butter chunks for a flaky topping. If topping browns too quickly, cover loosely with foil halfway through baking. Peeling peaches is optional but recommended for better texture. Can substitute bourbon with apple juice or peach nectar for a non-alcoholic version. For gluten-free, use a gluten-free flour blend. For dairy-free, substitute butter with coconut oil and milk with plant-based milk.
