  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • 1 cup rolled oats (old-fashioned oats preferred)
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup granulated sugar (for caramel)
  • 3 tablespoons unsalted butter (for caramel)
  • 1/4 cup heavy cream, warmed (or full-fat coconut milk for dairy-free)
  • Pinch of sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line with parchment paper.
  2. In a large bowl, toss sliced apples with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch until evenly coated.
  3. In a separate bowl, combine flour, rolled oats, brown sugar, salt, and baking powder. Pour in melted butter and stir until mixture clumps into a crumbly but slightly sticky dough. Add a teaspoon of milk or water if too dry.
  4. Spread half of the oat topping evenly into the bottom of the prepared pan, pressing lightly to form a base.
  5. Spoon the apple filling evenly over the oat base, distributing juices as best as possible.
  6. Crumble the remaining oat mixture over the apples, leaving some irregular clumps for texture.
  7. Bake for 35-40 minutes until oat topping is golden and juices are bubbly. Cover loosely with foil halfway through if topping browns too quickly.
  8. While baking, prepare caramel drizzle: In a small saucepan over medium heat, melt granulated sugar without stirring, swirling gently until deep amber color forms.
  9. Remove from heat and whisk in butter until smooth. Slowly add warmed heavy cream and stir until combined. Add a pinch of sea salt.
  10. Remove bars from oven and let cool at least 20 minutes to set.
  11. Drizzle caramel sauce over cooled bars just before serving.

Notes

Use old-fashioned rolled oats for best chewiness; quick oats will get mushy. Melt butter until warm, not hot, to bind topping properly. Watch caramel carefully to avoid burning. Let bars cool completely before drizzling caramel to prevent sogginess. For gluten-free, swap flour and oats accordingly. For dairy-free, use coconut oil and coconut milk.
