Ingredients

Scale
  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 1 cup (240ml) canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk or plain yogurt
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ⅓ cup (40g) all-purpose flour (for streusel)
  • ¼ cup (50g) packed light brown sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ cup (57g) unsalted butter, cold and cubed (use dairy-free butter if needed)
  • Pinch of salt (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and line the muffin tin with paper liners or grease well.
  2. Make the streusel topping: In a small bowl, combine ⅓ cup flour, ¼ cup brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Cut in the cold, cubed butter until mixture resembles coarse crumbs. Refrigerate until ready to use.
  3. Prepare the cream cheese filling: Beat softened cream cheese with ¼ cup sugar until smooth and fluffy. Add egg yolk and vanilla extract, mix until incorporated. Refrigerate until ready.
  4. Mix dry ingredients for muffins: Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. Combine wet ingredients: Beat granulated sugar, brown sugar, pumpkin puree, eggs, oil, vanilla extract, and buttermilk until smooth and creamy.
  6. Fold wet ingredients into dry ingredients gently until just combined.
  7. Fill muffin cups: Spoon about 2 tablespoons of batter into each cup, add 1 tablespoon of cream cheese filling in the center, then cover with another 2 tablespoons of batter.
  8. Top each muffin with cinnamon streusel generously.
  9. Bake for 20-25 minutes until a toothpick inserted near the cream cheese center comes out clean and tops are golden brown.
  10. Cool muffins on a rack for at least 10 minutes before serving.

Notes

Use softened cream cheese for smooth filling. Do not overmix batter to keep muffins tender. Keep butter cold for crumbly streusel. Room temperature eggs and dairy improve texture. Use an oven thermometer to ensure correct baking temperature. If muffins sink, cream cheese filling may have been too cold or oven temperature too high.
