This hearty one-pot soup combines spicy Italian sausage, tender potatoes, and silky kale in a rich, garlicky broth. It’s a comforting and nourishing meal that even kale skeptics will love.

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1.5 lbs Russet potatoes (about 3 medium), peeled and cubed into ½-inch pieces
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk or half-and-half
  • 1 large bunch Lacinato kale (about 4 cups chopped), stems removed and leaves chopped
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (if needed)

Instructions

  1. Brown the sausage: Place Dutch oven over medium-high heat. Add Italian sausage (remove casings if using links). Break up with a wooden spoon and cook until deeply browned, about 6-8 minutes. Transfer sausage to a plate with a slotted spoon, leaving rendered fat in pot.
  2. Sweat the aromatics: Reduce heat to medium. Add diced onion to pot and cook 4-5 minutes until translucent. Add minced garlic and red pepper flakes (if using); cook 1 minute until fragrant. Add a splash of olive oil if pot looks dry.
  3. Cook the potatoes: Add cubed potatoes to pot and stir for 2 minutes to coat with onion-garlic mixture.
  4. Add the broth: Pour in chicken broth and scrape up any browned bits from bottom of pot. Bring to a boil, then reduce to a simmer.
  5. Simmer until tender: Cover pot and simmer 12-15 minutes until potatoes are fork-tender.
  6. Return the sausage: Add cooked sausage back to pot and stir. Simmer 2-3 minutes to meld flavors.
  7. Add the kale: Stir in chopped kale and cook 2-3 minutes until bright green and softened. Do not overcook.
  8. Finish with milk: Reduce heat to low. Slowly pour in milk or half-and-half, stirring constantly. Warm through 1-2 minutes. Do not boil.
  9. Season and serve: Taste and add salt and pepper as needed. Ladle into bowls and top with Parmesan cheese if desired.

Notes

For freezing, stop after step 7 and add milk when reheating. Massage kale with olive oil before adding for better texture. Let soup rest 10-15 minutes before serving for deeper flavor.
