  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 6 cups low sodium beef broth
  • 1 cup dry white wine (optional)
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 2 sprigs fresh thyme or 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 8 baguette slices, about 1/2-inch thick
  • 2 cups shredded Gruyere cheese

Instructions

  1. Slice the onions thinly, about 1/8-inch thickness.
  2. Heat butter and olive oil in a large skillet over medium heat until melted and shimmering.
  3. Add the sliced onions with a pinch of salt and cook slowly, stirring often, for 30-40 minutes until deep golden brown and jammy.
  4. Transfer caramelized onions to the slow cooker. Add minced garlic, beef broth, white wine, bay leaves, and thyme sprigs. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 15 minutes before serving, preheat the oven broiler. Toast baguette slices on a baking sheet until golden, about 2 minutes per side.
  7. Ladle soup into oven-safe bowls, place a toasted baguette slice on top of each, and sprinkle generously with shredded Gruyere cheese.
  8. Broil bowls on the top rack for 3-5 minutes until cheese bubbles and turns golden brown, watching carefully to avoid burning.
  9. Remove from oven carefully and let cool for a couple of minutes before serving.

Notes

For a vegetarian version, substitute beef broth with vegetable or mushroom broth and skip or replace the wine with broth plus lemon juice. Use gluten-free bread for a gluten-free option. Watch the broiler carefully to avoid burning the cheese. Use fresh Gruyere cheese for best melting results.
