  • 1 tablespoon maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • ½ cup candied pecans (homemade or store-bought)

Instructions

  1. In a mixing bowl, whisk together 1 cup milk, ½ cup Greek yogurt, 3 tablespoons apple butter, ½ cup pumpkin puree, 1 tablespoon maple syrup, ½ teaspoon vanilla extract, and 1 teaspoon pumpkin pie spice until well combined.
  2. Stir in 1 cup rolled oats and a pinch of salt until oats are fully coated and mixture is even.
  3. Spoon the mixture evenly into 2-3 glass jars or airtight containers, leaving room at the top for expansion.
  4. Seal the containers and refrigerate for at least 6 hours or overnight to allow oats to soak and flavors to meld.
  5. Optional: To make homemade candied pecans, toast ½ cup pecans in a dry skillet over medium-low heat for 3 minutes, then toss with 1 tablespoon maple syrup and a sprinkle of cinnamon. Cook for another 2 minutes until sticky and fragrant. Let cool.
  6. In the morning, stir the oats for creaminess and top with candied pecans. Serve cold or warm gently in the microwave for about 30 seconds.

Notes

Stir apple butter directly into the wet ingredients before soaking for a silkier, more integrated flavor. Use rolled oats for best texture. Soak for at least 6 hours but no more than 24 hours to avoid overly soft oats. Add a splash of milk before serving if too thick. Add candied pecans just before eating to keep crunch.
