  • 1 teaspoon granulated sugar
  • ½ teaspoon freshly ground black pepper
  • ¼ cup thinly sliced red onion (optional)

Instructions

  1. Slice the cucumbers into thin rounds, about ⅛-inch thick. Leave the skin on if using English cucumbers.
  2. Place cucumber slices in a large bowl and sprinkle with 1 teaspoon kosher salt. Toss gently and let sit for 10 minutes.
  3. Transfer salted cucumbers to a colander, rinse quickly with cold water, then pat dry with paper towels or a clean kitchen towel.
