  • 4 boneless, skinless chicken breasts, pounded to even thickness

  • 2 tablespoons olive oil (extra virgin recommended)
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup chicken broth (low sodium preferred)
  • 1 cup heavy cream (or half-and-half as a substitute)
  • ½ cup grated fresh Parmesan cheese
  • 1 teaspoon dried Italian seasoning (or mix of oregano, basil, thyme)
  • ¼ teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels. Using a meat mallet or rolling pin, gently pound each breast to about ½-inch thickness. Season both sides liberally with salt and pepper.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. Once shimmering, add chicken breasts and cook without moving for 4-5 minutes until golden brown. Flip and cook another 4-5 minutes until cooked through (internal temperature 165°F). Remove chicken and set aside on a warm plate.
  3. Reduce heat to medium. Add 2 tablespoons butter to the pan and let melt. Add minced garlic and sauté for about 30 seconds, being careful not to burn it. Add chopped sun-dried tomatoes and stir for 1 minute.
  4. Pour in 1 cup chicken broth and scrape brown bits from pan bottom with a wooden spoon. Let simmer for 3 minutes to reduce slightly. Stir in 1 cup heavy cream and ½ cup grated Parmesan. Add dried Italian seasoning and red pepper flakes if using. Simmer gently for 5 minutes until sauce thickens, adding more broth or cream if needed to loosen.
  5. Return chicken breasts to skillet, spoon sauce over them, and simmer together for 2 minutes to meld flavors and warm chicken through. Sprinkle with fresh chopped basil before serving.

Notes

Use oil-packed sun-dried tomatoes for better moisture and flavor. To thicken sauce faster, mix 1 teaspoon cornstarch with cold water and whisk in. Avoid high heat to prevent cream sauce from breaking. Let sauce simmer slowly for best texture. Room temperature chicken cooks more evenly. Fresh Parmesan is key for flavor. Soak dry sun-dried tomatoes in warm water to soften if needed.
