  • 1 tsp pure vanilla extract
  • 1 tbsp lemon juice
  • 2 cups (300g) fresh strawberries, sliced
  • Optional: fresh blueberries or blackberries for the flag’s star section

Instructions

  1. Prepare the Crust (10 minutes): In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until all crumbs are evenly moistened. Press the mixture firmly into the bottom of your 9×13 inch pan. Use the back of a measuring cup to get an even layer. Pop it into the fridge while you make the filling to help it set.
  2. Make the Cheesecake Filling (15 minutes): In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy—no lumps! Add powdered sugar, vanilla extract, and lemon juice, mixing on low speed until combined. In a separate bowl, whip the cold heavy cream to soft peaks. Gently fold the whipped cream into the cream cheese mixture using a spatula. Fold carefully to keep the mixture light and airy.
  3. Assemble the Cake (10 minutes): Spread the cheesecake filling evenly over the chilled crust. Smooth the top with your spatula. Now, for the fun part — decorate the top with sliced strawberries arranged in stripes. If you’re adding blueberries or blackberries, place them in the top-left corner to mimic a flag’s star section. It doesn’t have to be perfect; rustic charm works well here!
  4. Chill (at least 4 hours, preferably overnight): Cover the cake with plastic wrap and refrigerate. This chilling step is crucial for the cheesecake to firm up and the flavors to meld. If you’re short on time, 4 hours still works, but overnight is best.

If cream cheese isn’t soft enough, microwave for 10 seconds at a time to avoid lumps. Fold whipped cream gently to keep mixture airy. Press crust firmly to avoid crumbling.
