  • 2 large boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 3 cups whole milk
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 8 ounces fettuccine or linguine pasta
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Season the sliced chicken breasts with Cajun seasoning, salt, and pepper. Let sit for 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken strips for 4-5 minutes until browned and mostly cooked through. Remove and set aside.
  3. Lower heat to medium, add butter to the pan, and melt. Add minced garlic and stir for about 30 seconds until fragrant.
  4. Pour in milk and heavy cream, stirring to combine with garlic butter. Bring to a gentle simmer.
  5. Add uncooked pasta in a single layer, pushing it down to submerge in the liquid.
  6. Reduce heat to medium-low and partially cover the pan. Cook pasta for 12-15 minutes, stirring every 3-4 minutes to prevent sticking. Add milk or water if sauce thickens too much before pasta is tender.
  7. Return cooked chicken to the pan. Stir in grated Parmesan cheese until melted and combined. Adjust seasoning if needed.
  8. Garnish with chopped parsley and serve immediately.

Notes

Use room temperature dairy to prevent curdling. Stir pasta gently and often to avoid sticking. Adjust heat to medium to medium-low for best results. Freshly grated Parmesan cheese improves sauce texture. If sauce thickens too much before pasta is done, add a splash of milk or water.
