  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 cup sour cream (full-fat)
  • 8 ounces wide egg noodles
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon paprika (smoked paprika preferred)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil or butter
  • Fresh parsley, chopped (for garnish, optional)
  • Additional sour cream (for garnish, optional)

Instructions

  1. Heat your pot over medium-high heat. Add olive oil or butter and let it get hot. Add sliced mushrooms and cook without stirring for about 3 minutes until browned.
  2. Add diced onion and cook for 3-4 minutes, stirring occasionally, until soft and translucent. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Push everything to the sides of the pot and add ground beef in the center. Break it up and cook until browned, about 5-6 minutes. Drain excess fat if needed, leaving a little for flavor.
  4. Sprinkle flour over everything and stir in. Cook for about 1 minute, stirring constantly, until it looks pasty.
  5. Slowly pour in beef broth while stirring. Add Worcestershire sauce, Dijon mustard, and paprika. Stir together and scrape up any browned bits from the bottom.
  6. Bring mixture to a gentle boil, then stir in egg noodles. Make sure they are mostly submerged. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring once halfway through.
  7. Check noodles after 10 minutes; they should be tender but still have a little bite. If not done, cover and cook for another 2 minutes.
  8. Remove pot from heat and let sit for about 1 minute. Stir in sour cream gently until sauce is creamy and well combined.
  9. Taste and adjust seasoning with salt and pepper. Sprinkle with fresh parsley if desired and serve immediately.

Notes

Don’t overcook the noodles; they will continue to soften in the hot sauce. Let sour cream come to room temperature before adding to prevent curdling. For best results, let the pot rest for 2-3 minutes after adding sour cream to thicken the sauce.
