Instructions

  1. Mash one ripe banana in a medium bowl until smooth with a few small lumps remaining (about 1-2 minutes).
  2. Add 1 cup (240 ml) milk, 2 tablespoons peanut butter, 1 tablespoon honey (optional), ½ teaspoon vanilla extract, and a pinch of salt to the mashed banana. Whisk gently until creamy and peanut butter is mostly incorporated (2-3 minutes).
  3. Stir in 1 cup (90 g) rolled oats, 1 tablespoon chia seeds, and ¼ teaspoon ground cinnamon until evenly distributed (about 1 minute).
  4. Pour the mixture into a mason jar or airtight container and seal tightly.
  5. Refrigerate for at least 6 hours or overnight to allow oats to soak and thicken.
  6. In the morning, stir the oats well. Add a splash of milk if too thick. Top with sliced banana, a drizzle of peanut butter, or chopped nuts as desired. Enjoy cold or warm in the microwave for 30-60 seconds.
