  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) Greek yogurt (plain preferred)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 tablespoon (15ml) honey or maple syrup (optional, for extra sweetness)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (non-negotiable)

Instructions

  1. Mash the banana: In a small bowl, mash the ripe banana with a fork until mostly smooth with a few tiny lumps, about 30 seconds.
  2. Add the peanut butter: Spoon 2 tablespoons of creamy peanut butter into the bowl with the mashed banana and stir until combined.
  3. Add the wet ingredients: Pour in 1/2 cup of milk, 1/4 cup of Greek yogurt, and 1/2 teaspoon of vanilla extract. Whisk or stir until smooth and well combined.
  4. Add the dry ingredients: Stir in 1/2 cup of rolled oats, 1 tablespoon of chia seeds (if using), and a pinch of salt. Mix until all oats are coated and no dry spots remain.
  5. Sweeten if needed: Taste the mixture. If desired, stir in 1 tablespoon of honey or maple syrup for extra sweetness.
  6. Transfer to a jar: Pour the mixture into a mason jar or container, leaving about an inch of space at the top.
  7. Seal and shake: Put the lid on and shake well to redistribute ingredients. If using a bowl, stir well.
  8. Refrigerate overnight: Place the jar in the fridge for at least 6 hours, but overnight is best for optimal texture.

Notes

Use a very ripe banana for natural sweetness. Mash banana and peanut butter together first for even distribution. Oats are best on days 1-3; after day 4, texture becomes mushy.
