A rich, cheesy, and perfectly balanced buffalo chicken dip made effortlessly in a slow cooker. Ideal for game days, potlucks, or casual gatherings, this creamy dip is a crowd-pleaser with just enough heat.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened (Philadelphia preferred)
  • ½ cup buffalo wing sauce (Frank’s RedHot recommended)
  • ½ cup ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Black pepper to taste
  • Optional garnishes: sliced green onions, chopped fresh parsley, extra buffalo sauce drizzle

Instructions

  1. If not pre-cooked, poach two boneless, skinless chicken breasts in simmering water for about 15 minutes until cooked through. Let cool and shred finely using two forks.
  2. Place 8 ounces of cream cheese in a mixing bowl. Use a hand mixer or fork to beat until creamy and smooth, about 2-3 minutes.
  3. Add ½ cup buffalo wing sauce and ½ cup ranch dressing to the softened cream cheese. Mix thoroughly until well blended and uniform in color.
  4. Fold in the shredded chicken, ensuring each piece is coated evenly with the creamy buffalo mixture.
  5. Stir in 1 teaspoon garlic powder, ½ teaspoon onion powder, and black pepper to taste.
  6. Gently mix in 1 cup shredded sharp cheddar and ½ cup shredded mozzarella cheese.
  7. Pour the mixture into a greased slow cooker insert or slow cooker. Spread evenly.
  8. Set slow cooker to low and cook for 2 hours, stirring halfway through (around the 1-hour mark). The dip should bubble slightly and be hot all the way through.
  9. Serve warm, garnished with sliced green onions or an extra drizzle of buffalo sauce if desired.

Notes

If dip is too thick after cooking, stir in a few tablespoons of milk or ranch dressing to loosen. Avoid rushing the slow cooker heat to prevent cheese separation. Use fresh shredded cheese for best melting results. Can be baked at 350°F for 20-25 minutes as an alternative cooking method.
