  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup chicken broth (240 ml), low sodium
  • 1/2 cup heavy cream (120 ml)
  • 1/3 cup grated Parmesan cheese
  • 3 cups fresh spinach (about 90 g)
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook each side for about 3-4 minutes until golden brown. (This step can be skipped if in a rush.)
  2. Transfer the browned chicken breasts to the slow cooker.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in chicken broth, scraping up any browned bits from the pan. Stir in chopped sun-dried tomatoes and red pepper flakes if using. Let it simmer for 2 minutes to meld flavors.
  4. Pour the sauce over the chicken in the slow cooker. Cover and cook on low for 4 hours or on high for 2 hours until chicken is tender and cooked through (internal temperature 165°F / 74°C).
  5. About 15 minutes before serving, stir in heavy cream, grated Parmesan cheese, and fresh spinach. Cover and cook on high until spinach wilts and sauce thickens slightly.

Notes

Browning the chicken before slow cooking adds flavor but can be skipped if short on time. Use fresh garlic for best aroma. Add spinach near the end to keep it fresh and vibrant. If sauce is too thin, thicken with a cornstarch slurry (1 tsp cornstarch + 2 tsp cold water) and cook for 10 more minutes. Frozen spinach can be used if thawed and drained. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
