  • 2 cans (15 oz each) white beans, drained and rinsed (Great Northern beans preferred)
  • 1 cup low-sodium chicken broth
  • 1 cup water
  • 1 cup half-and-half or whole milk
  • 1 ½ lbs boneless, skinless chicken breasts or thighs
  • 3 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 2 cups fresh baby spinach leaves
  • ½ cup sun-dried tomatoes, chopped (packed in oil)
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • ½ cup grated Parmesan cheese
  • Optional garnish: fresh basil leaves, chopped
  • Optional garnish: extra Parmesan for sprinkling

Instructions

  1. Prepare the ingredients: mince garlic, finely chop onion, roughly chop sun-dried tomatoes and spinach, rinse and drain white beans, and pat chicken dry.
  2. Layer the slow cooker: pour chicken broth and water into slow cooker; add garlic, onion, sun-dried tomatoes, white beans; sprinkle Italian seasoning, red pepper flakes (if using), salt, and pepper.
  3. Add the chicken pieces, nestling them into the broth mixture.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  5. Remove chicken and shred with forks; return shredded chicken to slow cooker.
  6. Stir in fresh spinach and half-and-half (or milk); spinach will wilt quickly.
  7. Use an immersion blender to puree about 1-2 cups of soup in the pot for creaminess; alternatively, blend separately and return to pot.
  8. Stir in grated Parmesan cheese until melted; adjust salt and pepper to taste.
  9. Serve immediately garnished with fresh basil and extra Parmesan if desired.

Notes

Rinse beans to remove excess sodium and starch. Add spinach last to avoid mushiness. Blend part of the soup for creaminess without heavy cream. Adjust seasoning gradually as slow cooking concentrates saltiness. If soup is too thick after blending, add more broth or water. Use frozen chicken by increasing cooking time by 1 hour. For dairy-free, substitute half-and-half with almond or coconut milk and Parmesan with nutritional yeast.
