  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 4 cups low-sodium chicken broth
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the white beans, and cube the cream cheese. Let the cream cheese sit at room temperature.
  2. Layer the ingredients in the crockpot: place chicken breasts in the bottom, then add onion, garlic, green chiles, cumin, oregano, salt, pepper, white beans, and chicken broth. Do not stir.
  3. Cook on low for 6-7 hours or high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  4. Remove chicken from crockpot, let rest 2-3 minutes, then shred with two forks or a hand mixer on low.
  5. Scoop out 1 cup of cooked beans and a little broth, blend until smooth, then return to crockpot and stir.
  6. Return shredded chicken to crockpot, add cubed cream cheese, and stir until melted and incorporated (about 2-3 minutes).
  7. Taste and adjust seasoning with more salt, pepper, cumin, or a squeeze of lime juice.
  8. Let chili rest for 10 minutes on warm or off to thicken.
  9. Serve hot with desired toppings.

Do not skip the bean-blending step—it thickens the chili naturally. Let cream cheese come to room temperature to avoid clumps. Season in layers for best flavor. Use a slow cooker liner for easy cleanup. For a thicker chili, reduce broth to 3 cups.
