Instructions

  1. Grate the zucchinis using a box grater or food processor into a large bowl. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out moisture.
  2. Gather the grated zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible.
  3. In a large bowl, combine the squeezed zucchini, minced garlic, grated Parmesan, beaten egg, flour, salt, and pepper. Stir until just combined; do not overmix.
  4. Heat 2 tablespoons of olive oil over medium heat in a nonstick or cast iron skillet until the oil shimmers but does not smoke.
  5. Scoop about 2 tablespoons (30g) of batter per fritter and gently flatten into round patties. Place in the pan without overcrowding.
  6. Cook fritters for 3-4 minutes per side, or until golden brown and crisp. Flip carefully to keep them intact.
  7. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Keep warm in a low oven if cooking in batches.
  8. While fritters cook, whisk together Greek yogurt, chopped dill, lemon juice, lemon zest, salt, and pepper in a small bowl. Adjust seasoning to taste.
