  • ¼ teaspoon freshly grated nutmeg
  • Pinch of salt
  • 3 tablespoons Oktoberfest beer (or any malty lager; substitute with apple cider or apple juice if needed)
  • ½ teaspoon vanilla extract
  • 1 sheet puff pastry (about 9x9 inches), thawed but cold
  • 1 large egg
  • 1 tablespoon water
  • Turbinado sugar or coarse sugar for sprinkling
  • ½ cup powdered sugar (for glaze, optional)
  • 12 tablespoons milk or cream (for glaze, optional)
  • ¼ teaspoon vanilla extract (for glaze, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Peel, core, and dice apples into small ¼-inch cubes.
  3. In a medium skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, nutmeg, and salt. Cook for 4-5 minutes, stirring occasionally, until apples soften.
  4. Pour in Oktoberfest beer and vanilla extract. Cook for another 2-3 minutes until liquid thickens into a syrupy glaze. Remove from heat and let cool completely.
  5. On a lightly floured surface, unfold puff pastry sheet. Cut into 9 equal squares (3×3 grid), each about 3 inches wide.
  6. Place about 1 tablespoon of cooled apple filling in the center of each pastry square. Fold opposite corners over filling, pinching to seal. Fold remaining corners and pinch all seams to create a bundle.
  7. Place bundles seam-side down on prepared baking sheet, about 1 inch apart.
  8. In a small bowl, whisk together egg and water. Brush tops of each bundle with egg wash. Sprinkle generously with turbinado sugar.
  9. Bake for 15-18 minutes until puffed and deep golden brown, rotating pan halfway through.
  10. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  11. For glaze (optional): Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over warm bites. Let set for 10 minutes before serving.

Notes

Keep puff pastry cold for best results. Let apple filling cool completely before assembling to prevent soggy pastry. For gluten-free, use gluten-free puff pastry. For dairy-free, use vegan puff pastry and plant-based butter. For a non-alcoholic version, substitute beer with apple cider or apple juice. Bites can be frozen before baking and baked from frozen at 400°F for 20-22 minutes.
