  • 1/2 cup finely grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sea salt (or to taste)
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash and trim the ends of the summer squash. Slice into thin rounds about 1/8 inch thick using a mandoline slicer or sharp knife.
  3. Lay the squash slices on a clean kitchen towel or paper towels and gently pat dry to remove excess moisture.
  4. Place the dried squash slices in a large mixing bowl. Drizzle with olive oil and toss gently to coat evenly.
  5. Sprinkle the grated Parmesan, garlic powder, onion powder, salt, black pepper, and smoked paprika (if using) over the slices. Toss again to coat all slices well.
  6. Arrange the slices in a single layer on the prepared baking sheet, ensuring they do not overlap.
  7. Bake for 15 minutes, watching for edges to turn golden and crisp.
  8. Carefully flip each slice using tongs or a spatula, then bake for another 10-15 minutes until golden brown and crisp.
  9. Transfer the chips to a wire rack or plate to cool completely; they will crisp up further as they cool.
  10. Serve immediately or store in an airtight container once fully cooled to maintain crispness.

Ensure squash slices are evenly thin (about 1/8 inch) for best crispiness. Pat slices dry before seasoning to avoid soggy chips. Flip chips halfway through baking for even crisping. If chips are floppy after baking, bake a few more minutes watching carefully to avoid burning. Store cooled chips in an airtight container at room temperature for 2-3 days.
