  • 1 pound fresh green beans, trimmed and blanched
  • 8 to 10 thin slices prosciutto
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons balsamic glaze
  • ½ teaspoon garlic powder (optional)
  • Fresh thyme or rosemary sprigs or finely chopped (optional)

Instructions

  1. Trim and blanch the green beans: Rinse 1 pound of fresh green beans and snap off the ends. Bring a large pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until bright green and just tender. Immediately transfer them to a bowl of ice water to stop the cooking and preserve color. Drain and pat dry thoroughly.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  3. Toss the blanched beans with 1 tablespoon olive oil, ½ teaspoon garlic powder (optional), and season lightly with salt and pepper.
  4. Lay out thin slices of prosciutto on a clean surface. Divide the green beans into small bundles of 6 to 8 beans each. Place a bundle at one end of a prosciutto slice, adding a small sprig of fresh thyme or rosemary if using. Roll the prosciutto tightly around the beans. Secure with kitchen twine or toothpicks if desired.
  5. Place each bundle seam-side down on the prepared baking sheet.
  6. Bake for 12-15 minutes, turning once halfway through, until the prosciutto is crisp and golden and the beans are heated through. Watch carefully to avoid burning.
  7. Remove from oven and let cool for a minute. Drizzle generously with about 2 tablespoons of balsamic glaze.
  8. Serve immediately while warm.

Pat green beans dry thoroughly after blanching to ensure prosciutto crisps well. Use thin prosciutto slices for best crispiness. Drizzle balsamic glaze after baking to avoid burning. Watch baking time closely as prosciutto can burn quickly. Bundles can be secured with twine or toothpicks if needed.
