A quick and easy recipe for crispy roasted eggplant slices layered with melty cheese, tangy marinara, and fresh basil, perfect for cozy dinners or impressing guests.

  • 2 medium-sized firm eggplants, sliced into ½-inch thick rounds
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1½ cups marinara sauce (homemade or store-bought)
  • 8 ounces fresh mozzarella, sliced
  • ½ cup freshly grated Parmesan cheese
  • About 20 fresh basil leaves, washed and patted dry
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the eggplants into ½-inch thick rounds. Lay them out on a paper towel-lined tray and sprinkle both sides with salt. Let them sit for 15 minutes to draw out bitterness and excess moisture.
  3. Pat dry the eggplant slices with paper towels to remove moisture and salt.
  4. In a large bowl, toss the eggplant slices with olive oil, salt, pepper, and Italian seasoning if using, ensuring each slice is lightly coated.
  5. Arrange the slices in a single layer on a baking sheet lined with parchment paper or a silicone mat. Roast for 20–25 minutes, flipping halfway through, until golden and crispy around the edges.
  6. On a clean baking sheet, place one eggplant slice as the base. Spoon about 1 tablespoon of marinara sauce over it, add a slice of fresh mozzarella, then another eggplant slice. Repeat layering until you have 3–4 layers, finishing with mozzarella and a sprinkle of Parmesan cheese on top.
  7. Return the stacks to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
  8. Remove from oven and immediately top each stack with fresh basil leaves.
  9. Let the stacks cool for a few minutes before serving so they hold together better.

Notes

Salt the eggplant slices and let them sit to remove bitterness and moisture for crispier results. Roast at high heat (425°F) and flip halfway for even browning. Avoid overcrowding the baking sheet. Use fresh mozzarella and basil for best flavor. For vegan or gluten-free versions, substitute cheeses and breadcrumbs accordingly. Reheat leftovers in the oven to maintain crispiness; avoid microwaving.
