  • 4 slices sharp cheddar cheese
  • 4 burger buns, toasted (brioche or potato buns recommended)

Instructions

  1. Prepare the Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, dill pickle relish, smoked paprika, garlic powder, salt, and pepper. Cover and refrigerate until serving.
  2. Cook the Bacon: Heat a large skillet over medium heat. Lay bacon slices in a single layer. Cook, turning occasionally, until crispy but not burnt. Transfer to paper towels to drain excess fat. Keep bacon fat in the pan.
  3. Mix the Burger Patties: In a mixing bowl, combine ground beef, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Divide into 4 equal portions and shape into patties about 3/4 inch thick. Make a shallow indentation in the center of each patty.
  4. Sear the Patties: Heat skillet with reserved bacon fat over medium-high heat. Cook patties 3-4 minutes on one side until crust forms. Flip and immediately add a slice of cheddar cheese. Cook another 3-4 minutes for medium doneness.
  5. Toast the Buns: While patties cook, toast buns in a toaster or under broiler until golden and slightly crisp.
  6. Assemble the Burgers: Spread special sauce on bottom bun. Add lettuce, tomato slices, cheesy burger patty, 1-2 slices of crispy bacon, sliced red onion if using, and top bun.
