  • 3 medium zucchinis (about 600g or 1.3 lbs), grated and well-drained
  • ¾ cup (75g or 0.66 cups) freshly grated Parmesan cheese
  • ½ cup (65g or 0.52 cups) all-purpose flour (can substitute almond flour for gluten-free)
  • 2 large eggs, beaten
  • 2 cloves garlic, minced (for the yogurt dip)
  • 1 cup (240g or 8 fl oz) plain Greek yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste
  • ¼ cup (60ml or 4 tablespoons) olive oil for frying
  • Fresh herbs (optional): chopped parsley or dill

Instructions

  1. Grate the zucchini using a box grater or food processor into a large bowl (about 5 minutes).
  2. Place grated zucchini in a clean kitchen towel or cheesecloth and wring out as much moisture as possible (expect about ¾ cup or 180ml liquid).
  3. In a large bowl, combine drained zucchini, Parmesan, flour, beaten eggs, salt (about ½ teaspoon), and pepper (¼ teaspoon). Mix gently until incorporated and thick enough to hold shape.
  4. Heat 2 tablespoons (30ml) olive oil in a non-stick or cast-iron skillet over medium heat until hot.
  5. Using a heaping tablespoon of mixture, drop into the pan and flatten gently to form 3-inch (7.5 cm) wide patties. Cook in batches without overcrowding.
  6. Fry fritters for 3-4 minutes per side until golden brown and crispy, flipping carefully when edges look set.
  7. Remove fritters and drain on paper towels. Keep warm in a low oven (200°F/90°C) while cooking remaining fritters.
  8. Prepare lemon garlic yogurt dip by mixing Greek yogurt, minced garlic, lemon juice, a pinch of salt, and optional fresh herbs. Chill until serving.
  9. Serve fritters warm with a dollop of lemon garlic yogurt dip and garnish with extra Parmesan or herbs if desired.

Notes

Squeeze out as much moisture as possible from zucchini for crispiness. Use fresh Parmesan for best flavor. Fry in batches to avoid sogginess. If fritters fall apart, add more flour or an extra egg white. Baking option: bake at 400°F (200°C) for 15-20 minutes, flipping halfway.
