  • 2 large eggs, room temperature

  • 1/2 cup (65g) all-purpose flour (or almond flour for gluten-free option)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup (150g) chopped peanut butter cups
  • 1/3 cup (85g) creamy peanut butter

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 8×8-inch pan or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and glossy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder.
  4. Gradually add the dry ingredients into the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  5. Chop the peanut butter cups into small chunks. Soften the peanut butter slightly if firm, then fold the chopped peanut butter cups into it.
  6. Spread half of the brownie batter evenly into the prepared pan. Dollop spoonfuls of the peanut butter cup mixture over the batter. Pour the remaining brownie batter on top, and gently swirl the layers together with a knife or skewer to create a marbled effect.
  7. Bake for 25-30 minutes, starting to check at 25 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs but not wet batter.
  8. Let the brownies cool completely in the pan on a wire rack, about 1 hour. Cut into squares and serve.

Notes

For cleaner slices, chill brownies for 20 minutes before cutting. To prevent peanut butter cups from sinking, chop into small pieces and fold gently. For dairy-free, swap butter with coconut oil and use dairy-free peanut butter cups. Avoid overmixing the batter to keep brownies fudgy.
