  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 2 cups (300g) mixed berries – blueberries, raspberries, and blackberries (fresh or frozen)
  • 1/3 cup (65g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 8×8-inch baking pan lightly with butter or line it with parchment paper for easy removal.
  2. In a large bowl, combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Stir to mix evenly. Pour in the melted butter and stir until the mixture resembles coarse crumbs. Save about 1/3 of this mixture for the topping.
  3. Press the remaining crumble mixture into the bottom of your prepared pan firmly and evenly to form the crust.
  4. In a medium bowl, toss together mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract if using. Ensure all berries are coated well.
  5. Spread the berry filling evenly over the crust, keeping it contained to avoid overflow during baking.
  6. Sprinkle the reserved crumble topping evenly over the berries.
  7. Bake for 35-40 minutes until the topping is golden brown and the berry filling bubbles slightly around the edges. If the topping browns too quickly, tent the pan loosely with foil halfway through baking.
  8. Remove from oven and cool completely on a wire rack to allow the filling to firm up, about 1-2 hours.
  9. Cut into squares and serve. Enjoy as is or with vanilla ice cream or whipped cream.

If using frozen berries, thaw and pat dry to avoid soggy crust. For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend and use certified gluten-free oats.
