  • ½ cup cream cheese, softened
  • 2 tablespoons honey or maple syrup
  • ½ teaspoon pure vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • Optional: 1 tablespoon lemon juice
  • 1 cup granola
  • Optional: chopped toasted almonds or walnuts
  • Optional garnishes: fresh mint leaves, shaved dark chocolate or cocoa nibs

Instructions

  1. Prepare the Creamy Layer (10 minutes): In a medium bowl, combine softened cream cheese and Greek yogurt. Beat with electric mixer or whisk until smooth and fluffy. Add honey or maple syrup and vanilla extract, mix well. Adjust sweetness to taste and set aside.
  2. Prepare the Fruit (5 minutes): Rinse berries gently under cold water and pat dry. Hull and slice strawberries. Toss berries lightly with lemon juice if using.
  3. Layer the Parfaits (5-7 minutes): Spoon about 2 tablespoons of creamy mixture into glass or jar. Add about 3 tablespoons of mixed berries, then sprinkle 2 tablespoons of granola. Repeat layers until glass is full, finishing with berries and a sprinkle of granola.
  4. Chill (Optional, 15-30 minutes): Refrigerate to allow flavors to meld and granola to soften slightly. For crunchier topping, add final granola just before serving.
  5. Garnish and Serve: Add fresh mint leaf or chocolate shavings on top for decoration.

Notes

If cream cheese is not soft enough, microwave for 10 seconds before mixing. Avoid over-mixing berries to prevent mushiness. Add granola just before serving to keep it crunchy. Store leftovers in airtight containers in the refrigerator for up to two days, keeping granola separate if possible.
