Easy 5-Ingredient Ham and Cheese Pocket Sandwiches

  • 2 sheets puff pastry, thawed
  • 6 ounces thinly sliced ham (deli-style or leftover)
  • 1 cup shredded cheddar cheese (about 100 grams)
  • 2 tablespoons Dijon mustard
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 6 equal squares (about 4×4 inches).
  3. In a small bowl, stir together the shredded cheddar cheese and Dijon mustard.
  4. Place a slice of ham on each pastry square, leaving about a half-inch border around the edges. Spoon a generous tablespoon of the cheese-mustard mixture on top of the ham.
  5. Fold each square in half to form a triangle or rectangle. Press the edges together firmly, then crimp with a fork to seal.
  6. Brush each pocket with beaten egg, avoiding getting egg inside the pockets.
  7. Bake in the preheated oven for 15-18 minutes or until the pockets are puffed and golden brown.
  8. Cool slightly before serving to allow the cheese to set and prevent burns.

Notes

Keep puff pastry chilled until assembly to maintain flakiness. Do not overfill pockets to prevent leaking. Brush with egg wash for a golden crust. Can freeze assembled pockets before baking; add a few extra minutes to baking time when baking from frozen. Avoid microwaving leftovers to keep crust crisp.
