A quick and simple homemade version of the classic frozen peanut butter sandwich, made with just bread, peanut butter, and a glass. Perfect for lunchboxes or a fast snack, these crustless pockets are soft, sweet, and free from preservatives.

  • ½ cup creamy peanut butter (e.g., Jif or Skippy)
  • Optional: ¼ cup jam or jelly (e.g., strawberry or grape)
  • Optional: Pinch of flaky sea salt

Instructions

  1. Prepare your work surface: Lay out two slices of soft white bread on a clean cutting board. If the bread is very fresh, gently press down on the center of each slice with your palm to flatten it slightly.
  2. Cut the bread rounds: Take a drinking glass (about 3-inch diameter) and press it firmly into the center of one slice of bread. Twist slightly to cut through the crust. Lift the glass to reveal a perfect round. Repeat with the second slice. Save the crusts for another use.
  3. Spread the peanut butter: Take one bread round and spread about 1 tablespoon of creamy peanut butter evenly, leaving a ¼-inch border around the edge. If using jam, spread a thin layer on top of the peanut butter.
  4. Top with the second round: Place the second bread round on top of the peanut butter, aligning the edges. Press down gently with your palm to stick them together.
  5. Crimp the edges: Take a fork and press the tines into the edge of the sandwich all the way around to create a tight seal, similar to crimping a pie crust. Press firmly enough to fuse the bread but not so hard that the filling squeezes out.
  6. Repeat: Continue with the remaining slices of bread to make about 4 sandwiches total.
  7. Optional: Freeze for later: Place finished sandwiches in a single layer on a parchment-lined baking sheet. Freeze for about 30 minutes until firm, then transfer to a freezer-safe bag. They will keep for up to a month.

Notes

Use room temperature bread for best results. The fork crimp is essential to prevent leaking. For a warm snack, toast the assembled sandwich in a dry skillet for 1-2 minutes per side. If using natural peanut butter, stir well before using to avoid sogginess.
