Easy 7-Day Beginner Sourdough Starter from Scratch

A forgiving, straightforward method to create a sourdough starter from scratch using only all-purpose flour and water. This 7-day process accounts for common beginner mistakes and provides clear visual cues at every stage.

Ingredients

  • All-purpose flour (unbleached preferred, bleached works in a pinch)
  • Water (tap water is fine, filtered is better)
  • Whole wheat or rye flour (optional, for a faster start)

Instructions

  1. Day 1: Combine 60 grams of all-purpose flour and 60 grams of water in a clean jar. Stir until no dry flour remains. Cover loosely and set in a spot that stays between 70-75°F. Leave alone for 24 hours.
  2. Day 2: Check your starter. Discard half (about 60 grams) and feed with another 60 grams of flour and 60 grams of water. Stir well, mark the height, and cover again.
  3. Day 3: Discard half, feed with 60 grams each of flour and water, and mark the height.
  4. Day 4: Discard half, feed with 60 grams each of flour and water, and be patient.
  5. Day 5: Discard half, feed with 60 grams each, and mark the height.
  6. Day 6: Discard half, feed with 60 grams each, and watch how fast it rises. If it doubles within 8 hours, you’re ready for day seven.
  7. Day 7: Feed your starter one last time. It should double in size within 4-6 hours, be full of bubbles, and have a pleasant sour aroma. It should pass the float test.

Notes

Temperature matters: starter ferments faster in warm kitchens (75-80°F) and slower in cool ones (65-70°F). Consistency is key: starter should look like thick pancake batter after each feeding. Don’t skip the discard to prevent exponential growth. Learn to read the hooch: a layer of dark liquid means the starter is hungry. Trust your senses: starter should smell sour, yeasty, or fruity; if it smells like nail polish remover, it’s too hungry; if it smells like rotten eggs or garbage, start over.
