  • 1 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract
  • A small pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice 2 medium peaches into roughly 1/2-inch thick slices. Toss them gently with 1 teaspoon lemon juice, 1/4 teaspoon vanilla extract, and a pinch of salt in a medium bowl.
  3. In another bowl, combine 1/4 cup brown sugar, 3 tablespoons all-purpose flour, 1/4 cup rolled oats, 1/2 teaspoon cinnamon, and a pinch of nutmeg. Stir to blend the dry ingredients evenly.
  4. Add 2 tablespoons cold, cubed unsalted butter to the topping mixture. Using a pastry cutter or fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  5. Lightly grease a small baking dish (8×4-inch or similar) and spread the peach mixture evenly across the bottom. Sprinkle the oat topping evenly over the peaches.
  6. Bake for 25-30 minutes until the topping is golden brown and peach juices bubble around the edges. Tent with foil if topping browns too quickly.
  7. Let the crisp rest for 5-10 minutes before serving.

Notes

Use cold butter to create a crumbly topping. If peaches are watery, sprinkle 1 teaspoon cornstarch over them before adding topping to avoid sogginess. Peeling peaches is easier after blanching in boiling water for 30 seconds and shocking in ice water. Tent with foil if topping browns too fast. For vegan version, substitute butter with coconut oil and brown sugar with coconut sugar.
