Ingredients

  • Cheese (choose 2-3): Brie or Camembert, Aged Cheddar, Manchego or Gouda, Goat cheese or Blue cheese
  • Meat (choose 1-2): Prosciutto, Salami or Soppressata, Capicola or Speck
  • Fruit (fresh and dried): Grapes, Fresh figs or sliced apple, Dried apricots or figs
  • Crunchy Elements: Good quality crackers or crostini, Toasted nuts (almonds, walnuts, or pecans)
  • Something Sweet & Savory: Honey or fig jam, Olives (Castelvetrano or Kalamata), Cornichons or pickled onions

Instructions

  1. Set out your board. Give it a quick wipe. If using a wooden board, a light rub with a cut lemon half adds a nice fresh scent—just dry it off afterward.
  2. Place your small bowls first. Arrange them off-center—maybe one in the upper left corner and one in the lower right. This creates visual balance. Fill them with olives, honey, or jam.
  3. Add the cheese. Place the Brie (whole or halved) near one of the bowls. Slice the cheddar or Manchego into thin triangles or cubes and fan them out. Leave space between cheese types so they don’t touch—it looks cleaner and keeps flavors separate.
  4. Layer the meat. Fold prosciutto slices into loose ribbons or rosettes. Arrange them in a cluster near the cheese. For salami, fan the slices out in a line. Don’t stack them flat—lifted folds look more inviting.
  5. Scatter the fruit. Place small clusters of grapes in the gaps. Tuck dried apricots or figs near the cheese. If using sliced apples or pears, give them a light squeeze of lemon juice to keep them from browning.
  6. Add the crunch. Fill in the remaining spaces with crackers and nuts. Don’t pile them—just let them rest naturally. You can always add more later.
  7. Finish with drizzles and garnishes. Drizzle a little honey over the Brie or goat cheese. Sprinkle a few flaky sea salt crystals over the whole board. Add a sprig of fresh rosemary or thyme for color—it’s not just for looks; the aroma is lovely.
  8. Serve immediately. Set the board in the center of the table with small plates, napkins, and a couple of cheese knives. Let your date graze at their own pace.

Notes

Let cheese come to room temperature for best flavor. Don’t overcrowd the board; leave negative space. Prep components up to 24 hours ahead and assemble just before serving.
