Easy Cheesy Bacon Ranch Pull-Apart Bread

This Cheesy Bacon Ranch Pull-Apart Tailgate Bread is warm, gooey, and packed with smoky bacon and tangy ranch flavor. Perfect for game days, potlucks, or any gathering, it’s a crowd-pleaser that disappears in minutes.

  • 1 large loaf of sourdough or Italian bread (about 1 pound)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces mozzarella cheese, shredded
  • 8 slices of bacon, cooked until crispy and crumbled
  • 1/2 cup unsalted butter, melted
  • 1 packet (1 ounce) ranch seasoning mix
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper or aluminum foil.
  2. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain and cool, then crumble into small pieces.
  3. In a small mixing bowl, whisk together the melted butter and the entire packet of ranch seasoning mix until well combined.
  4. Place the loaf of bread on the prepared baking sheet. Using a serrated knife, make cuts about 1 to 1.5 inches apart across the loaf, cutting almost all the way through to the bottom but not through the bottom crust. Then make another series of cuts in the opposite direction, creating a diamond or checkerboard pattern.
  5. Using a pastry brush, generously brush the ranch butter mixture into all the cuts and crevices of the bread. Reserve about 2 tablespoons of the mixture for later.
  6. Mix the shredded cheddar and mozzarella together in a bowl. Stuff the cheese mixture into the cuts in the bread, pushing it down deep into the crevices. Sprinkle the crumbled bacon over the top, pushing some into the cuts as well.
  7. Drizzle or brush the reserved ranch butter over the top and sides of the loaf. Then brush the outside of the bread with the olive oil.
  8. Bake for 15-18 minutes, or until the cheese is fully melted and bubbly and the edges of the bread are golden brown and crispy. If desired, broil for the last 1-2 minutes for an extra golden top.
  9. Remove from the oven and let it cool for about 5 minutes. Sprinkle the fresh chives over the top. Serve warm.

Notes

For best results, shred your own cheese from a block, let bacon cool completely before crumbling, and use room temperature cheese. Score bread deeply but not all the way through. Watch the oven closely to prevent burning.
