A simple, comforting breakfast casserole featuring sausage, eggs, and a blend of sharp cheddar and mozzarella cheeses baked with day-old bread for a custardy texture. Perfect for busy mornings and crowd-pleasing.

  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 4 cups cubed day-old bread (white or sourdough)
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the sausage in a large skillet over medium heat, breaking it apart with a spatula until fully browned and no longer pink, about 7-8 minutes. Drain excess grease.
  3. In a large mixing bowl, whisk together 6 large eggs and 2 cups whole milk until smooth. Add 1 teaspoon salt, ½ teaspoon black pepper, and 1 teaspoon garlic powder. Whisk briefly to combine.
  4. Grease a 9×13-inch baking dish lightly with butter or non-stick spray. Spread 4 cups of cubed day-old bread evenly in the dish.
  5. Sprinkle the cooked sausage over the bread layer.
  6. Evenly distribute 1 ½ cups sharp cheddar and 1 cup mozzarella shredded cheese on top of the sausage.
  7. Slowly pour the egg and milk custard mixture over the bread, sausage, and cheese. Press down gently with a spatula to help the bread soak up the custard evenly.
  8. Let the casserole sit at room temperature for 10-15 minutes to allow the bread to absorb the custard fully.
  9. Bake in the preheated oven for 45-50 minutes until the top is golden brown and the center is set (a knife inserted should come out clean).
  10. Remove from oven and let cool for about 10 minutes before serving.
  11. Sprinkle with 2 tablespoons chopped fresh parsley for garnish.

Notes

Use day-old bread to prevent mushiness. Let the assembled casserole rest before baking to develop custardy texture. If the top browns too quickly, cover loosely with foil halfway through baking.
