A quick and balanced cold bento box lunch packed with kid-approved flavors and fresh ingredients, perfect for busy school mornings and customizable for dietary needs.

Ingredients

  • Cooked chicken breast, shredded or sliced
  • Hard-boiled eggs, peeled and halved
  • Edamame pods, shelled
  • Cooked quinoa or brown rice, cooled
  • Mini whole wheat pita pockets or rice crackers
  • Baby carrots, washed and trimmed
  • Cucumber slices or mini cucumber spears
  • Cherry tomatoes, halved
  • Snap peas or sugar snap peas
  • Fresh berries (strawberries, blueberries, or raspberries)
  • Apple slices, tossed with a splash of lemon juice
  • Plain Greek yogurt (e.g., Fage)
  • Fresh dill or chopped parsley
  • Fresh lemon juice
  • Garlic powder

Instructions

  1. Cook and cool the grains and proteins: Prepare quinoa or brown rice ahead or use leftovers. Shred or slice the cooked chicken breast. Hard-boil eggs, peel, and halve them. This step can be done the night before to save time.
  2. Prepare the dipping sauce: In a small bowl, mix 1/2 cup (120 ml) plain Greek yogurt with 1 teaspoon fresh lemon juice, 1/2 teaspoon garlic powder, and 1 tablespoon chopped fresh dill or parsley. Stir well and refrigerate until packing.
  3. Wash and prep the produce: Rinse baby carrots, snap peas, cucumber slices, cherry tomatoes, and berries. Dry all thoroughly to avoid soggy lunch. Toss apple slices with a few drops of lemon juice to keep them from browning.
  4. Assemble the bento box: Start by placing a portion of quinoa or rice (about 1/2 cup or 3.2 oz) in one compartment. Add chicken slices or edamame in another. Place vegetables in separate sections, using silicone cups for the dip and juicy fruits. Add hard-boiled eggs last, careful to keep them from rolling around.
  5. Final touches: Add mini pita pockets or rice crackers to the largest compartment for easy snacking. Close the box securely, ensuring the dip cup is tightly sealed to prevent leaks.
  6. Pack and label: If prepping multiple lunches, label each with the date to keep track and rotate leftovers efficiently.

Notes

Keep produce dry to avoid sogginess. Use silicone cups to separate wet ingredients. Prep grains and proteins the night before to save time. Use an insulated lunch bag with an ice pack to keep the lunch fresh. Customize the dip with herbs or spices like smoked paprika or soy sauce for variety. Substitute gluten-free crackers or rice cakes for gluten-free needs. Use coconut yogurt or hummus for dairy-free dip alternatives.
