This easy copycat Starbucks pumpkin spice latte is made with real pumpkin puree, warm spices, and a touch of vanilla. It’s ready in under 10 minutes and tastes even better than the drive-through version.

  • 1 cup (240 ml) milk (whole, oat, or almond)
  • 2 tablespoons pumpkin puree (100% pure, not pie filling)
  • 1/2 cup (120 ml) strong brewed coffee or espresso (dark roast)
  • 12 tablespoons granulated sugar (or maple syrup/honey)
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract (pure preferred)
  • Whipped cream (for topping, optional)
  • Pinch of cinnamon (for garnish)

Instructions

  1. Brew your coffee. Make 1/2 cup (120 ml) of strong coffee or a double shot of espresso. Set aside.
  2. In a small saucepan over medium heat, whisk together 1 cup (240 ml) of milk and 2 tablespoons of pumpkin puree. Whisk constantly until the pumpkin is fully dissolved, about 1 minute.
  3. Stir in 1/2 teaspoon of pumpkin pie spice, 1-2 tablespoons of sugar (start with 1 if unsure), and 1/2 teaspoon of vanilla extract. Whisk until smooth and sugar has dissolved.
  4. Continue heating the milk mixture over medium heat, whisking occasionally, until hot and steaming but not boiling (small bubbles around the edges). This takes about 3-4 minutes.
  5. Optional: Froth the milk using a milk frother, or pour into a jar, seal tightly, and shake vigorously for 20 seconds.
  6. Pour the brewed coffee into a mug. Then pour the hot pumpkin milk mixture over it. Stir gently to combine.
  7. Top with a generous dollop of whipped cream and a light dusting of cinnamon. Serve immediately.

Notes

For a dairy-free version, use oat milk and coconut whipped cream. To reduce sweetness, omit sugar or use a sugar substitute. For a stronger pumpkin flavor, add an extra tablespoon of puree (makes latte thicker).
