These easy crockpot buffalo chicken sliders are the perfect game day appetizer. Tender, shredded chicken in a tangy, buttery buffalo sauce served on sweet Hawaiian rolls, made with minimal effort in the slow cooker.

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 1/2 cup unsalted butter, cubed
  • 1 packet (about 1 ounce) ranch dressing mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 12-count package Hawaiian sweet rolls
  • Blue cheese or ranch dressing for drizzling (optional)
  • Celery sticks and carrot sticks for serving (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season lightly on both sides with salt, pepper, garlic powder, and onion powder.
  2. Place the seasoned chicken breasts in the bottom of a 6-quart slow cooker in a single layer.
  3. In a small bowl, whisk together the buffalo wing sauce and ranch dressing mix. Pour evenly over the chicken. Drop the cubed butter on top of the chicken; do not stir.
  4. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C).
  5. Carefully remove the cooked chicken to a cutting board and shred with two forks.
  6. Return the shredded chicken to the slow cooker with the cooking liquid. Stir well to coat. Let sit on WARM for about 10 minutes.
  7. Optional: Preheat oven to 350°F (175°C). Split Hawaiian rolls in half and place on a baking sheet. Toast for about 5 minutes until lightly golden.
  8. Assemble sliders: Place a generous scoop of shredded buffalo chicken on the bottom half of each roll. Drizzle with dressing if desired. Top with the other half of the roll.
  9. Serve immediately with celery and carrot sticks on the side.

Notes

For best results, thaw chicken completely before cooking. Do not lift the lid during cooking. Toast rolls to prevent sogginess. Leftover chicken can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
