  • 34 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 8 ounces (227 grams) cream cheese, softened
  • 6 slices cooked and crumbled bacon or 1 cup pre-cooked bacon bits
  • 1 cup shredded sharp cheddar cheese (about 113 grams)
  • 1 packet ranch seasoning mix (about 1 ounce / 28 grams)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped green onions or fresh parsley for garnish

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Sprinkle ranch seasoning, garlic powder, salt, and pepper evenly over the chicken.
  3. Add softened cream cheese in whole chunks on top of the chicken.
  4. Layer cooked crumbled bacon and shredded cheddar cheese over the cream cheese.
  5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken reaches 165°F (74°C) and is tender.
  6. Shred the chicken directly in the crockpot using two forks and stir until the sauce is smooth and creamy.
  7. Adjust seasoning with salt and pepper if needed and garnish with chopped green onions or parsley before serving.

Notes

If cream cheese is not softened, microwave for 20 seconds before adding to crockpot to avoid lumps. Avoid stirring early during cooking to prevent lumps. Use two forks to shred chicken directly in the crockpot for best results. Opening the lid frequently extends cooking time. For a lighter option, substitute Greek yogurt for cream cheese or serve over cauliflower rice for low-carb.
