  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 3 cups (about 1 large head) broccoli florets, cut into bite-sized pieces
  • 1/3 cup (110g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) sriracha (optional)
  • 1 tablespoon (15ml) sesame oil
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons cold water (for slurry)
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions

  1. In a small bowl or measuring cup, whisk together honey, low-sodium soy sauce, minced garlic, rice vinegar, sriracha, and sesame oil until combined.
  2. Trim any visible fat from chicken breasts and pat dry with paper towels. Place chicken in the bottom of a 4-6 quart crockpot in a single layer.
  3. Pour the sauce mixture evenly over the chicken, turning pieces to coat lightly.
  4. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until chicken reaches an internal temperature of 165ยฐF (74ยฐC) and shreds easily.
  5. Using two forks or tongs, shred the chicken directly in the crockpot. Leave shredded chicken in the sauce.
  6. Add broccoli florets to the crockpot, gently stir into sauce and chicken. Cover and cook on high for 20-30 minutes until broccoli is bright green and crisp-tender.
  7. In a small bowl, mix cornstarch with 2 tablespoons cold water until smooth. Pour slurry into crockpot and stir gently. Let cook uncovered for about 5 minutes until sauce thickens into a glossy glaze.
  8. Garnish with sesame seeds and sliced green onions if desired. Serve immediately over steamed rice, quinoa, or noodles.

Notes

Pat chicken dry to help sauce cling. Add broccoli in the last 30 minutes to keep it crisp-tender. Use a meat thermometer to ensure chicken reaches 165ยฐF. Double the sauce if you love extra. For a spicier version, double the sriracha or add red pepper flakes. Leftovers keep in the fridge for up to 4 days and freeze well for up to 3 months.
