Ingredients

Scale
  • 2 pounds ground beef, 80/20 blend
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Optional: 1 tablespoon Worcestershire sauce
  • 8 classic hamburger buns (brioche or potato rolls recommended)
  • Butter, softened (for toasting buns)
  • Mayonnaise
  • Ketchup
  • Mustard
  • 8 slices cheddar cheese (or Swiss or pepper jack)
  • 1 large red onion, thinly sliced
  • 2 large tomatoes, sliced
  • 1 head of lettuce, leaves separated
  • Pickles, sliced (dill or bread-and-butter)
  • Jalapeños, sliced (optional)
  • About 12 strips bacon, cooked crispy
  • Avocado slices or guacamole (optional)
  • Optional sides: Potato chips or fries, coleslaw or fresh salad

Instructions

  1. In a large mixing bowl, combine ground beef with salt, pepper, garlic powder, onion powder, and Worcestershire sauce if using. Mix gently without overworking.
  2. Divide the meat into 8 equal portions (about 4 ounces each). Form into patties about 4 inches in diameter and 1/2 inch thick. Press a slight dimple in the center of each patty.
  3. Place patties on a plate or tray and refrigerate for 15-20 minutes.
  4. Slice onions, tomatoes, pickles, and jalapeños. Wash and dry lettuce leaves. Butter the hamburger buns lightly for toasting.
  5. Preheat grill or grill pan to medium-high heat. If using charcoal, wait until coals are covered with gray ash.
  6. Toast buns cut-side down on the grill for 1-2 minutes until golden and crisp. Remove and set aside.
  7. Grill patties about 4 minutes per side for medium doneness. Add a slice of cheese on top during the last minute to melt.
  8. Cook bacon strips in a skillet or on the grill edge until crispy.
  9. Arrange all toppings, sauces, buns, and cooked ingredients on serving trays or tables for guests to build their own burgers.

Notes

Do not overwork the meat when mixing or shaping patties to avoid tough burgers. Press a dimple in the center of each patty to prevent puffing. Toast buns lightly for added crunch and to hold up against juicy patties. Keep a spray bottle of water handy to manage grill flare-ups. Refrigerate patties before grilling to help them hold together.
