  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 1¾ cups (420 ml) whole milk
  • 2 large eggs, room temperature
  • 4 tablespoons (60 g) unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • ½ cup (120 ml) maple syrup for drizzle
  • Optional: fresh berries or sliced bananas
  • Optional: chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a 9×13 inch sheet pan with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  3. In a separate bowl, whisk the milk, eggs, melted butter, and vanilla extract until smooth and slightly frothy.
  4. Pour the wet ingredients into the dry ingredients and gently whisk until just combined; a few lumps are okay.
  5. Pour the batter evenly into the prepared sheet pan and smooth the surface with a spatula. Sprinkle fresh berries or nuts on top if desired.
  6. Bake for 15-18 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. While baking, gently warm the maple syrup in a small saucepan over low heat.
  8. Let the pancake cool for 3-5 minutes, then cut into squares and drizzle generously with the warm maple syrup before serving.

Notes

Do not overmix the batter to keep pancakes fluffy. Use room temperature eggs and milk for better texture. Line the pan with parchment for easy cleanup. Warm the maple syrup before drizzling for better flavor and pourability. If edges brown too fast, cover loosely with foil after 12 minutes.
