  • 1 cup shredded sharp cheddar cheese (about 113 g)
  • 6 large flour tortillas (10-inch size)
  • 2 tablespoons milk or half-and-half

  • 1 tablespoon unsalted butter or oil for cooking eggs
  • Optional fillings: cooked breakfast sausage, diced bell peppers, sautéed onions
  • Aluminum foil or parchment paper for wrapping before freezing

Instructions

  1. Beat the eggs: In a mixing bowl, whisk together 8 large eggs with 2 tablespoons (30 ml) of milk, salt, and pepper until fully combined (about 2 minutes).
  2. Heat the skillet: Place a 10-inch nonstick skillet over medium-low heat and add 1 tablespoon (15 g) of butter. Let it melt and coat the pan evenly (about 1 minute).
  3. Cook the eggs gently: Pour the egg mixture into the pan. Let it sit undisturbed for 10 seconds, then gently stir occasionally with a silicone spatula for 4-5 minutes until eggs are soft, creamy, and slightly glossy.
  4. Add cheese: Sprinkle 1 cup shredded sharp cheddar over the eggs. Stir gently to melt the cheese evenly throughout. Remove from heat after about 1 minute.
  5. Warm the tortillas: Warm tortillas in a dry skillet for about 20 seconds on each side or wrap in a damp paper towel and microwave for 20 seconds.
  6. Assemble the burritos: Lay a tortilla flat and spoon 1/6 of the egg and cheddar mixture onto the center. Add optional fillings if desired. Fold sides in and roll tightly from one end to the other.
  7. Wrap for freezing: Wrap each burrito individually in parchment paper, then cover with aluminum foil. Label with the date.
  8. Freeze: Place wrapped burritos in a freezer-safe container or zip-top bag. Store for up to 3 months.
  9. Reheat when ready: Unwrap foil and parchment, then microwave on high for 1-2 minutes or bake in a preheated oven at 350°F (175°C) for 20-25 minutes.

Notes

Cook eggs gently on low heat to keep them fluffy and avoid rubbery texture. Warm tortillas before assembling to prevent cracking. Let burritos cool before wrapping to avoid sogginess. For reheating, baking gives a crispier tortilla than microwaving. Burritos keep well frozen for up to 3 months; can last up to 6 months if well wrapped.
