  • ½ cup granulated sugar (100 grams)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons cornstarch
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats (90 grams)
  • ½ cup sliced or chopped almonds (50 grams)
  • ½ cup all-purpose flour (60 grams)
  • ⅓ cup packed brown sugar (70 grams)
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 6 tablespoons unsalted butter, melted (85 grams)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel each peach carefully, then slice into roughly ½-inch (1.3 cm) thick wedges. Trim away any bruised spots. Place the sliced peaches in a large bowl.
  3. Sprinkle the granulated sugar, cornstarch, cinnamon, and a pinch of salt over the peaches. Pour in the lemon juice and vanilla extract. Gently toss everything together until the peaches are evenly coated.
  4. Transfer the peach mixture to your baking dish and spread it out evenly, making sure the peaches are in a single layer as much as possible.
  5. In a separate bowl, combine the rolled oats, sliced almonds, all-purpose flour, brown sugar, cinnamon, and salt. Stir to mix the dry ingredients well.
  6. Pour the melted butter over the oat mixture and stir until everything is evenly coated and clumps of crumble start to form.
  7. Sprinkle the crumble evenly over the peaches, covering as much of the fruit as possible.
  8. Bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  9. Cool for 10-15 minutes before serving to allow the filling to set.

If topping browns too quickly, tent loosely with foil after 25 minutes. For extra juicy peaches, add an additional tablespoon of cornstarch. Peeling peaches over a bowl helps retain juice.
